Food and Beverage Plant Floor Costs in Ottawa: A Spec Sheet

Rules that apply here
- Safe Food for Canadians Regulations, s.57
For a licensed establishment: floors smooth, non-absorbent and impervious to moisture where there is a contamination risk, providing or permitting good drainage where liquid can accumulate, and materials that withstand repeated cleaning.
- Alcoholic beverages (SFCR ss.7(2), 15(2))
Beverages with more than 0.5% alcohol by volume are excluded from the SFCR licence requirement, and s.57 attaches to an establishment named in a licence. For non-alcoholic products shipped out of province, check with CFIA.

Where the plant is a food premise, floors in food rooms must be tight, smooth and non-absorbent; ask OPH whether it applies to your production area.

- Whether your plant holds an SFC licence, and which areas it names
- Which system the contractor proposes for wet, hot and cold areas, with data sheets
- How drainage and any trench drains are handled, and whether a plumbing permit is in scope
- Which shifts or shutdown days the work fits into

Do the federal food rules cover a brewery floor?
Beverages with more than 0.5% alcohol by volume are excluded from the SFCR licence requirement (ss.7(2) and 15(2)), and the s.57 establishment rules apply to an establishment named in a licence. If you also make non-alcoholic products for other provinces, check with CFIA.
Does the federal rule require drainage?
SFCR s.57 asks for floors that provide or permit good drainage, except where there is no risk of liquid accumulation, in a licensed establishment. The Ontario food premises rule does not mention drains.
