Urethane cement (also called cementitious urethane) is a thick, trowelled or self-levelling system aimed at wet, hot and chemically harsh floors: commercial kitchens, dish areas, breweries, food plants, walk-in coolers and freezers.
Its data sheets are written around conditions that trouble thin coatings. One self-levelling product lists a slab moisture tolerance of 99% relative humidity, and one installer page quotes an operating range of about -40 to 120 degrees Celsius. Those are one product's figures; the data sheet in your quote governs.
Ontario's Food Premises regulation (O. Reg. 493/17, s.7(1)(c)) requires floors in food rooms to be "tight, smooth and non-absorbent" and kept "clean and in good repair". It does not name a product, and it does not require coved bases, floor drains or a slope. A seamless resinous floor with an integral cove base is one way to meet the wording; Ottawa Public Health inspects food premises and asks to be told about significant renovations.
Federally licensed food plants (for example, a bakery shipping out of province) fall under the Safe Food for Canadians Regulations, s.57, which adds floors that are "impervious to moisture" and that "provide or permit good drainage". Check with your quality lead.
Adding floor or trench drains during a kitchen re-floor is plumbing work, and plumbing alterations need a City permit.
